Across Brazil’s coffee landscape, the Ipê tree stands out for its dramatic seasonal transformation, shedding its leaves before bursting into vibrant blooms that cover entire regions in color. The name “Roxo” draws from this natural cycle, reflecting both the visual richness of the landscape and the expressive character developed through careful processing. Found throughout Brazil, Ipê trees thrive in warm, sunlit climates, much like the coffee grown in the Cerrado Mineiro and southern Minas regions where this lot originates.

This coffee is sourced from local producers farming at lower elevations around 900 meters, where consistent climate conditions support reliable production and uniform cherry development. Unlike traditional Brazilian profiles, this lot undergoes anaerobic fermentation, a controlled process that enhances fruit expression and complexity. After fermentation, the coffee is dried to stabilize the profile, resulting in a cup that carries layered sweetness and structure while maintaining the approachable balance expected from Brazilian coffees.
