The Story Behind Finca Valentina Natural ML

This honey process microlot comes from Finca La Valentina in the Montecillos region of Honduras, where producer Carlos Ernesto Mejía Rodríguez continues a fourth generation family legacy in coffee cultivation. Situated at 1,600 meters above sea level, the farm is named after his eldest daughter and reflects both a personal commitment and a long term vision for sustainable production. Spanning roughly 32 manzanas, La Valentina is managed as a model farm with a focus on ecological balance, responsible use of natural resources, and diversification to support long term economic stability for the families who work there.

This lot features red and yellow Catuai varieties that are selectively hand harvested at peak ripeness and processed using the honey method. The coffee is dried on patios in thick layers under the sun, allowing the remaining mucilage to develop a rich and expressive cup profile. In the cup, it presents pronounced sweetness with notes of panela and honey, complemented by bright acidity, a creamy body, and a smooth caramel finish.
