The Story Behind Montecillos SHG EP

Honduran Fairtrade Organic SHG Green Coffee Beans from Mercon Specialty

For generations, coffee has shaped life in the Montecillos region of Honduras. This regional lot comes from a community of producers in San Pedro de Tutule, where families have transformed small inherited plots into thriving specialty coffee farms, preserving a tradition that continues to define the region today.

StoneX Specialty Coffee partners with these dedicated producers to showcase the distinctive character of Montecillos. Grown between 1,500 and 1,550 meters above sea level, the region's cool climate and high elevations create ideal conditions for cultivating exceptional Arabica coffee. The carefully selected lots feature IHCAFE 90 and Catuai varieties, harvested at peak ripeness between December and March.

After harvest, cherries are processed using a combination of eco-friendly depulpers and traditional washed methods. One of these techniques, known locally as canal de correteo, uses flowing water and wooden rakes to gently separate the highest-quality beans before the coffee is dried on patios under careful supervision. This meticulous approach preserves clarity, balance, and consistency in every lot.

The result is a clean, vibrant cup that reflects the craftsmanship of Honduras' smallholder producers and the rich coffee-growing heritage of the Montecillos region.
