The Story Behind 17/18 Sul De Minas SSFC

Brazil is the world’s largest coffee producer, contributing 33% of the global supply. Within Brazil, Minas Gerais is the leading coffee-producing state, and this lot comes from its southern region, Sul de Minas.

This regional lot is a semi-washed process, also known as pulped natural—a method used in Brazil for over 20 years. Similar to honey-processed coffees from Central America, the cherries are pulped but not fully washed, leaving some mucilage on the seed before drying. This results in a quicker drying time compared to Brazil’s traditional natural process, yielding a cleaner and sweeter cup..

The SSFC (Strictly Soft Fine Cup) grade indicates that the coffee was grown at high altitudes, which enhances bean density and produces a smoother cup profile.
