The story behind Chiapas Washed SHG
While coffee is grown across 15 states in Mexico, the majority comes from Veracruz, Oaxaca, Puebla, and Chiapas. Finca La Laja is located in the mountainous region of Tlaltetela, Veracruz, where rich biodiversity and a warm-humid climate create ideal conditions for specialty coffee.
Spanning 113 hectares, the farm cultivates Caturra and Gárnica varieties under shade, with planting densities of 2,000 to 2,500 plants per hectare. The volcanic soils and high altitude contribute to the coffee’s complexity, while careful washed, semi-washed, honey, and natural processing methods enhance its unique cup profile.
Since acquiring the farm in 1980, the producers at Finca La Laja have remained committed to sustainable farming and quality-driven production, ensuring each harvest reflects the region’s rich coffee-growing tradition.
