The Story Behind Chiapas SHG EP

While coffee is grown in 15 states in Mexico, 90% of it comes from four states: Veracruz, Oaxaca, Puebla, and Chiapas. This organic coffee comes from the Jaltenangoregion of Chiapas. Jaltenango is a municipality within the Socioeconomic Region La Fraylescana with incredible biodiversity and jungle life.

More than 500,000 coffee farmers are in Mexico, with 95% being smallholders with less than three hectares and 85% indigenous Mexicans. Mexico is one of the world’s largest producers of certified organic coffees.

Chiapas borders Guatemala and is contiguous with Huehuetenango, so these coffees tend to have similar cup profiles, bright and clean acidity, and light fruit and cocoa notes.
